I’m not obsessive with feeding my kids all healthy, all the time. I’ve been known to throw goldfish crackers their way and perhaps even some fruit snacks.
But when I find a snack that’s healthy and super easy to make, I’m willing to give it a shot.
That’s the whole reason we all go for processed anyway, right? Because it’s easy? (And so good!). But processed foods lack nutrients, so it won’t last long for the kiddos and they’ll be asking for another snack in no time.
A friend introduced me to these raw, vegan energy bites. With a tiny tweak to the recipe, my family loves them. Especially the toddler!! And a little bonus, she loves to help make them too.
You will need:
3/4 cup raw almonds
3/4 cup raw cashews (I like them better with roasted cashews, but with those, it wouldn’t all be raw. I don’t mind, but some people do.)
3/4 cup of dates
1 Tablespoon chia seeds
Throw everything together in a food processor and blend. I used my Ninja .
It takes a bit, but when everything starts to stick together, it’s done.
Roll into bite sized balls and stick in the refrigerator. They are delicious! Plus it’s nice to have something I feel good about giving to my daughter to snack on.
These are so yummy and if you have the kids help roll them they also use their fine motor skills.

Yes, they are sweet. I like dates on their own too to snack on, but some people don’t because of the texture.
