I used to skip breakfast. Maybe because I was never hungry, but more likely because I just didn’t feel like making anything.
Now that I have kids, I no longer have the luxury of being lazy. The kids need breakfast every day.
These are my favorite healthy breakfast muffins. Initially, it takes some time, but once you have a batch in the freezer, you’re good to go for a few days.
There is no flour and no added sugar. I found the recipe somewhere on Pinterest and now I make them all the time.
You will need:
2 1/2 cups oats, blend in a food processor
Add-
1 cup Greek yogurt
1/2 cup honey
2 T ground flax seeds (buy them whole, then grind them in coffee grinder-or if you’re smarter than me, you can find them already ground at the store.)
2 eggs
2 tsp baking powder
1 tsp baking soda
1 tsp vanilla
2 ripe bananas
Blend everything together. For me, this recipe fits perfectly in my 12 muffins tin. I always add about 2/3 of a cup of chocolate chips too.
Bake at 350 for 18-20 minutes.
They freeze really well. Just put in microwave for 45 seconds or so when you’re ready to eat one.
My daughter loves these for breakfast…so do I.
