Soooooo, What’s for Dinner?

I originally published this post in May, and now, a month and a half later,  I need a reminder to plan out my meals better.

If you’re anything like me, you have to try to keep an eye on your monthly monetary input/output.  Otherwise known as your budget.  (Ugh!)

We’ve been trying to keep a monthly grocery budget and we always seem to go over.  So this month, we thought we would keep a really close eye on it and be a bit more strict.

Well.  It’s the 22nd of May and we have gone $150 OVER our budget.  With two Costco runs this month and the purchase of a Keurig, (which was $125-but it’s going to save me a ton of money on coffee runs!)

I keep trying to convince my husband that Costco should have its own separate budget because we usually get diapers, stuff to make wipes, and toilet paper…but he disagrees with my logic.

So.  Here we are.  $150 over and still more than a week left in the month.

What to do for dinner?  This Mama is gonna have to improvise…and raid the cabinets, refrigerator, and freezer.

This is what I found:

Bag of red lentils

Half of an onion

Minced garlic

Some carrots

Frozen peas

Two ice trays of chicken broth

Some left over pancetta

Loaf of bread

Lots of cheese-cheddar, mozzerella, and an Italian blend

My plan of action…

I’m going to dice the onion and saute it with the pancetta and some minced garlic.  Then I will add the carrots (chopped), the lentils, and the broth and let it cook.  I have never cooked lentils before and the packaged directions are kind of vague.  So I’m just going to wing it and hope for the best.  At some point I will add peas, they just need to heat through, so I don’t think they need to be cooking as long as everything else.

After the lentils and carrots are cooked, I am going to toss it all into my Ninja  and blend it.  I don’t much care for cooked carrots because of the texture and my husband hates peas.  If it’s blended, I think it will solve both problems.

I will serve it with a side of cheesy toasted bread.

It seems like a good plan to me in theory, but then again, so did almond butter cookies, and those were a disaster!  Wish me luck, I’m really hoping we don’t have to make a fast food run tonight!!

Next stop, more detailed meal planning.

***Update!  This soup actually turned out pretty good!  It was really healthy, the flavor was delicious, and my family loved it!  It was also a lot more filling than I expected.  I wasn’t hungry for the rest of the night.

The only downside is probably the texture-it was sort of like applesauce.  We ate it with cheesy bread so we didn’t notice as much.
